Putting the crackle in your crackle.

After years of trying to balance pork loin chops on the barbie or in the fry pan to crackle the crackle, came up with this simple solution to the problem.
Using stainless steel bandit strapping, bent a holder to make it easy.
Place uncooked chops in the holder, crackle pushed down onto hotplate and cook until crackle is crackled then remove chops from holder and cook.
Best crackle ever.
